Rabbit should be skinned and gutted and soaked in salt water or milk overnight
Remove rabbit from the water or milk rinse in clean water
Place it in a large pan cover with water and bring to the boil
Simmer for 2 to 3 hrs or until the meat starts to flake of the bone
Drain and let the rabbit cool, remove all the meat and place into a Tupperware container
Add a good pinch of sea salt and cover with olive oil, place in refrigerator this should keep for up to 2 weeks.
