Pre heat the oven to 160 C
Roll the rabbit meat in the marinade until evenly covered.
Thinly slice the peppers.
Put the rabbit meat in a large frying pan with some olive oil and fry until fully cooked (brown if possible).
Add the peppers and brown them off.
Add the sauce mix, stir for a minute or so to bring back to temperature, then transfer the mix to an oven dish.
Cover the dish in foil and place in the oven (just whilst you heat the tortilla wraps).
Heat the tortillas one at a time under the grill and wrap in foil to keep warm.
Serve with salsa, guacamole and soured cream (as preferred).
- 500 grams (or 1lb) trimmed and chopped rabbit meat (about two medium rabbits).
- 1 jar Discovery (or other) Fajita sauce mix with marinade.
- 1 pack of flour tortillas
- 3 large mixed peppers
